4. Cheese plants producing aged hard cheese do not have to meet pasteurization requirements if the cheese is aged at the manufacturing plant at least 60 days at a temperature of no less than 35 degrees F (2 degrees C). Worldwide Directory listing of establishments that further process (slice, shred, portion, etc.) cheese products for sale to U.S. Forces is required.

5. Minimum processing of ready-to-eat fruits and vegetables includes, but is not limited to, the following processes: cleaning, washing, trimming, coring, slicing, and shredding. Other terms used to refer to minimum processed products are "lightly processed", "partially processed", "fresh processed", and "pre-prepared".

6. Unprocessed fresh fruits and vegetables (FF&V) are not considered ready-to-eat. Disinfectant procedures require complete immersion of raw fruits and vegetables of unknown origin in a minimum 200-ppm chlorine solution for 30 seconds or soaking in 160 degrees F (72 degrees C) potable drinking water for one (1) minute. Treat FF&V from an exempted or approved source with 100-ppm chlorine for 30 seconds. All consumers should be advised all ready-to-eat FF&V in accordance with applicable service regulations (for Army users, the provisions of TB MED 530 apply).

7. When listing is required for unprocessed FF&V, listing will be for packing sheds of FF&V, not the actual grower. A packing shed is a facility that performs any of the following before delivery to the U.S. Armed Forces: cleaning, washing, culling, trimming, and packing. Note 6 above also applies.

8. Only pasteurized juices are authorized for purchase by the Department of Defense (DOD).

9. Establishments producing finished products containing less than 3 percent by weight components of animal origin may be exempted from Worldwide Directory listing by the command publishing this Worldwide Directory, unless otherwise specified. The 3 percent rule does not apply to ruminant products originating from countries with BSE outbreaks. In this case, a zero tolerance level applies.

10. The use of cyclamates in artificially sweetened products is prohibited for beverages sold to U.S. Forces. It is the responsibility of the contracting agencies to ensure that suppliers are aware of this requirement.

11. Establishments furnishing meals purchased with appropriated or nonappropriated funds must have sanitary approval to include the use of approved sources for food items and ingredients used. For one-time occasions, a Food Operational Risk Assessment is appropriate and Worldwide Directory listing is not required.

12.
